		<description>How &#039;bout fried chicken or pork tenderloin chops, mashed potatoes (get a potato ricer.  As long as they&#039;re cooked all the way, you&#039;ll NEVER have lumps again.  They&#039;re amazing.  $20 at BB &amp; B)  How about meatloaf patties (I do mine on the foreman to get rid of the fat) and scalloped potatoes?  Your new food processor probably has an attachment to slice the potatoes the right way.  How about pasta primavera?  How about chicken parmesan?  How about chicken broccoli fettuccine alfredo and garlic bread?  How about shredded beef chimmichangas, spanish rice and volcano beans?  How about creamy chicken enchiladas? (Oooooh.... that&#039;s the way I&#039;d go.  I&#039;ve got an AMAZING recipe if you want it.)  How about frito pie or white chili?   Oh my God... how is it that I&#039;ve just named 8 dinners for you and for the life of me, I cannot figure out one to make for myself!  What the heck?  Killer appetizer you ask for?  Mini pitas in the bread section at the store cut in half so they&#039;re only 1 layer thick. Drizzle E.V.O.O. olive oil on the pitas.  Put artichoke hearts, roasted red bell peppers, a little bit of mozarella cheese and sprinkle LIGHTLY with oregano and bake &#039;till cheese is bubbly.  I&#039;ve been known to have those for lunch.  Dang.  Now I&#039;m hungry.  Thank GOD for the gym membership.... I&#039;d be hosed otherwise!  :)
